As we head into the holidays and have guests to entertain, here is a delicious courgette cake recipe topped with fresh garden flowers.
Courgette cake with a lemon curd filling
My daughter made this beautiful cake for me. It is dairy-free, incredibly moist, and scrummy!

Ingredients:
For the sponge:
250 g courgettes - weigh before grating
2 large eggs
125 ml vegetable oil
150 g caster sugar
225 g self-raising flour
½ tsp bicarbonate of soda
½ tsp baking powder
For the filling:
Lime/Lemon curd
1 Lime
For the icing:
200 g cream cheese
100 g icing sugar
juice of a lime
2 tbsp chopped pistachio nuts
Instructions:
Preheat the oven to 180 degrees and line 2, 21cm sandwich tins.
Wipe the courgettes with a kitchen towel, then grate. The coarse side of an ordinary box grater is good (anything too fine can turn them into mush) when you've finished the sieve to remove excess water.
Put the eggs, oil and sugar in a bowl and beat until creamy.
Sieve in the flour, bicarb and baking powder and continue to beat until well combined.
Now stir in grated courgettes.
Pour the mixture into tins and bake for 30 minutes until browned. Let cool for 5-10 minutes.
Sharpen the curd with freshly squeezed lime juice and add to the middle of the cake.
To make the icing, beat the cream cheese until smooth. Add the sieved icing sugar, beating well to combine, and then stir in lime juice to taste. Smear the icing and scatter the pistachios on top.
